Today, I'm excited to not only guide you through the world of West Texas real estate but also invite you into my kitchen for a taste of the Southwest with my award-winning Beef Chili featuring fiery habanero peppers. Just as I've tailored my real estate services to meet your unique needs, this hearty chili recipe offers a personalized kick, with the option to adjust the heat level to your liking. So, let's explore Lubbock's vibrant housing market while simmering up a pot of comfort and warmth!

Ingredients:

  • 2 pounds ground beef

  • 1 large onion, chopped

  • 3 cloves garlic, minced

  • 2 habanero peppers, finely chopped (adjust to your preferred spice level)

  • 2 cans (14 ounces each) diced tomatoes

  • 1 can (15 ounces) kidney beans, drained and rinsed

  • 1 can (15 ounces) black beans, drained and rinsed

  • 1 can (15 ounces) pinto beans, drained and rinsed

  • 2 cups beef broth

  • 2 tablespoons chili powder

  • 1 tablespoon cumin

  • 1 teaspoon paprika

  • 1 teaspoon oregano

  • Salt and pepper to taste

  • Shredded cheddar cheese, sour cream, and chopped green onions for topping (optional)

Instructions:

  1. In a large pot or Dutch oven, brown the ground beef over medium-high heat. Break it into crumbles as it cooks. Drain any excess fat and set aside.

  2. In the same pot, add chopped onions and garlic. Sauté for a few minutes until they become translucent.

  3. Stir in the chopped habanero peppers. Be cautious when handling habaneros; you may want to use gloves, and be sure not to touch your face.

  4. Return the cooked beef to the pot and mix well with the onions, garlic, and habaneros.

  5. Add the diced tomatoes (with their juice) and all three types of beans to the pot. Stir to combine.

  6. Pour in the beef broth and add the chili powder, cumin, paprika, and oregano. Season with salt and pepper to taste. Stir everything together.

  7. Bring the chili to a boil, then reduce the heat to low. Cover and let it simmer for at least 30 minutes, stirring occasionally. The longer it simmers, the more the flavors will meld together.

  8. Taste and adjust the seasoning, adding more spices or salt as needed to suit your taste.

  9. Serve your hearty chili hot, garnished with shredded cheddar cheese, a dollop of sour cream, and chopped green onions if desired.

Enjoy your spicy and flavorful chili with a side of Lainie's famous jalapeno cornbread!
