As the holiday season approaches, there's nothing quite as comforting and heartwarming as the smell of freshly baked gingerbread cookies filling the kitchen. Join me, Lainie Eilenberger, your trusted real estate agent in Lubbock and West Texas, as I share my cherished recipe for making the most delightful Gingerbread Man Cookies. This tradition has been a part of my family's holiday celebrations for generations, and now I'm excited to pass it on to you.


Ingredients:

  • 3 cups all-purpose flour

  • 1 1/2 teaspoons ground ginger

  • 1 1/2 teaspoons ground cinnamon

  • 1/2 teaspoon ground cloves

  • 1/2 teaspoon baking soda

  • 1/4 teaspoon salt

  • 1/2 cup unsalted butter, softened

  • 1/2 cup granulated sugar

  • 1 large egg

  • 1/2 cup molasses

  • 1 teaspoon vanilla extract

  • Icing (for decorating)

Directions:


Step 1: Prepare the Dough

  1. In a medium-sized bowl, whisk together the flour, ginger, cinnamon, cloves, baking soda, and salt. Set this dry mixture aside.

  2. In a separate large bowl, cream together the softened butter and sugar until the mixture becomes light and fluffy. This should take about 2-3 minutes.

  3. Add the egg, molasses, and vanilla extract to the butter-sugar mixture. Mix until well combined.

  4. Gradually add the dry mixture to the wet mixture, mixing until the dough forms. You may need to use your hands to knead it together at the end.

  5. Divide the dough into two equal portions, wrap them in plastic wrap, and refrigerate for at least 1 hour or until firm.

Step 2: Roll and Cut the Cookies

  1. Preheat your oven to 350°F (180°C) and line baking sheets with parchment paper.

  2. Take one portion of the chilled dough and roll it out on a lightly floured surface to about 1/4 inch thickness.

  3. Use gingerbread man-shaped cookie cutters to cut out your cookies. Place them on the prepared baking sheets, leaving some space between each cookie.

  4. Repeat this process with the second portion of dough.

Step 3: Bake and Decorate

  1. Bake the cookies in the preheated oven for 8-10 minutes, or until they are set and just beginning to brown around the edges.

  2. Remove the cookies from the oven and let them cool on the baking sheets for a few minutes before transferring them to wire racks to cool completely.

  3. Once the cookies are completely cooled, it's time to get creative with the icing! Use various colors to decorate your gingerbread men with faces, clothing, and any other designs you like.

Step 4: Enjoy and Share!

  1. Allow the icing to dry completely before stacking or storing the cookies.

Today, I have a recipe for Thanksgiving Rum Cake that you can try out. This delicious and moist cake is perfect for your Thanksgiving dinner and is sure to impress your guests.


Ingredients:

  • 1 cup chopped pecans

  • 1 package yellow cake mix

  • 1 package instant vanilla pudding mix

  • 4 eggs

  • 1/2 cup cold water

  • 1/2 cup vegetable oil

  • 1/2 cup dark rum

  • 1/2 cup butter

  • 1/4 cup water

  • 1 cup white sugar

  • 1/2 cup dark rum

Instructions:

  1. Preheat oven to 325°F.

  2. Grease and flour a 10-inch Bundt pan.

  3. Sprinkle chopped pecans evenly over the bottom of the pan.

  4. In a large mixing bowl, combine cake mix, pudding mix, eggs, 1/2 cup cold water, 1/2 cup vegetable oil, and 1/2 cup dark rum.

  5. Beat on low speed until blended, then beat on high speed for 2 minutes.

  6. Pour batter over pecans in the pan.

  7. Bake for 1 hour or until a toothpick inserted into the center of the cake comes out clean.

  8. Cool for 10 minutes in the pan.

  9. Invert cake onto serving plate.

  10. Prick top of cake with a fork.

  11. Combine 1/2 cup butter, 1/4 cup water, and 1 cup sugar in a saucepan.

  12. Bring to a boil and continue boiling for 5 minutes, stirring constantly.

  13. Remove from heat and stir in 1/2 cup dark rum.

  14. Drizzle and smooth glaze evenly over top and sides of cake.

  15. Allow cake to absorb glaze and repeat until all glaze is used up.

Bourbon Pecan Pie Recipe


Ingredients:

  • 1 refrigerated pie crust (or homemade)

  • 1 cup pecan halves

  • 3 large eggs

  • 1 cup granulated sugar

  • 1 cup light corn syrup

  • 1/4 cup unsalted butter, melted

  • 2 tablespoons bourbon

  • 1 teaspoon pure vanilla extract

  • 1/4 teaspoon salt

Directions:

  1. Preheat your oven to 350°F (175°C).

  2. Place the refrigerated pie crust into a 9-inch pie dish, crimping the edges as desired. If using a homemade crust, roll it out and transfer it to the pie dish.

  3. Spread the pecan halves evenly over the bottom of the pie crust.

  4. In a medium bowl, whisk together the eggs, granulated sugar, light corn syrup, melted butter, bourbon, pure vanilla extract, and salt until well combined.

  5. Pour the mixture over the pecans in the pie crust.

  6. Bake in the preheated oven for 45-50 minutes or until the center is set. You can check for doneness by gently jiggling the pie; it should be slightly firm.

  7. Allow the pie to cool completely before serving. For an extra touch of indulgence, serve with a dollop of whipped cream or a scoop of vanilla ice cream.
