Pumpkin Spice Tres Leches Cake Recipe

Ingredients:


Cake:


  • 1 cup all-purpose flour

  • 1 1/2 tsp baking powder

  • 1 tsp cinnamon

  • 1/2 tsp nutmeg

  • 1/4 tsp cloves

  • 5 large eggs, separated

  • 1 cup sugar (divided)

  • 1/3 cup whole milk

  • 1/2 cup pumpkin puree


Tres Leches Mixture:


  • 1/3 cup heavy cream

  • 1/3 cup evaporated milk

  • 1/3 cup sweetened condensed milk

  • 1/2 tsp vanilla extract


Topping:

  • 1 cup heavy cream

  • 2 tbsp powdered sugar

  • 1 tsp cinnamon

  • Optional garnish: caramel drizzle or crushed pecans


Instructions:


  1. Prepare the Cake Batter: Preheat oven to 350°F. In a bowl, mix flour, baking powder, cinnamon, nutmeg, and cloves. In another bowl, beat egg yolks and 3/4 cup sugar until light and creamy. Add milk and pumpkin puree, blending well. Gently fold in the dry ingredients.

  2. Whip the Egg Whites: In a clean bowl, beat egg whites until soft peaks form. Gradually add the remaining 1/4 cup sugar and beat until stiff peaks form. Gently fold into the cake batter.

  3. Bake the Cake: Pour batter into a greased 9x13-inch baking dish and bake for 25-30 minutes. Let cool completely.

  4. Add the Tres Leches: Mix heavy cream, evaporated milk, sweetened condensed milk, and vanilla. Poke holes in the cooled cake and slowly pour the mixture over it. Let soak for at least 1 hour (or overnight for best results).

  5. Finish with Topping: Whip heavy cream with powdered sugar and cinnamon until stiff peaks form. Spread over the cake and garnish as desired.
