Recipe: Grilled Fish Tacos with Homemade Habanero Mango Salsa

Ingredients:

• 1 lb firm white fish (such as tilapia or cod), cut into fillets

• 8 flour tortillas

• 1 ripe mango, diced

• 1 small red onion, finely chopped

• 1 habanero pepper, seeded and minced

• 1/4 cup fresh cilantro, chopped

• Juice of 1 lime

• Salt and pepper to taste

• Olive oil

• Optional toppings: shredded cabbage, avocado slices, lime wedges
  

Directions:

1. Preheat your grill to medium-high heat.

2. Brush the fish fillets with olive oil and season with salt and pepper.

3. Grill the fish for 3-4 minutes per side, or until cooked through and lightly charred. Remove from the grill and let cool slightly.

4. While the fish is cooking, prepare the mango salsa by combining the diced mango, chopped red onion, minced habanero pepper, chopped cilantro, and lime juice in a bowl. Season with salt and pepper to taste and mix well.

5. Warm the flour tortillas on the grill for 30 seconds on each side.

6. To assemble the tacos, place a grilled fish fillet on each tortilla and top with a spoonful of the habanero mango salsa. Add any optional toppings as desired.

7. Serve immediately, with extra lime wedges on the side for squeezing.
