Classic Cast Iron Skillet Cornbread with Honey Butter
Ingredients:
For the Cornbread:
1 cup cornmeal
1 cup all-purpose flour
1 tbsp baking powder
½ tsp baking soda
½ tsp salt
1 tbsp sugar (optional)
1 cup buttermilk
2 eggs
½ cup unsalted butter, melted
1 tbsp vegetable oil (for the skillet)
For the Honey Butter:
½ cup unsalted butter, softened
2 tbsp honey
¼ tsp salt
Instructions:
Prepare the Cornbread:
Preheat the oven to 425°F (218°C) and place a cast iron skillet in the oven while it heats.
In a large bowl, whisk together cornmeal, flour, baking powder, baking soda, salt, and sugar.
In a separate bowl, whisk together buttermilk, eggs, and melted butter until combined.
Slowly mix the wet ingredients into the dry ingredients, stirring until just combined.
Remove the hot cast iron skillet from the oven, carefully coat it with vegetable oil, and pour in the batter.
Bake for 18-22 minutes, or until golden brown and a toothpick comes out clean.
Make the Honey Butter:
In a small bowl, mix softened butter, honey, and salt until smooth and creamy.
Spread over warm cornbread for a sweet, buttery finish.
