Hello, everyone! It's Lainie Eilenberger, your trusted real estate expert, back with another delightful blog post. Today, we're not just diving into the world of Lubbock and West Texas real estate; we're also diving into the sweet, indulgent world of baking. Join me on this journey as we whip up a scrumptious Chocolate Cake with Chocolate Icing, a perfect treat for any occasion.

Baking Bliss: Chocolate Cake and Real Estate

At Key and Slate Real Estate Group, we believe in making every moment special. Whether you're buying or selling a home, it's an occasion worth celebrating. And what better way to celebrate than with a homemade chocolate cake that's as rich and sweet as the memories we help create?

Chocolate Cake Recipe

Ingredients:

  • 2 cups all-purpose flour

  • 1 ¾ cups granulated sugar

  • ¾ cup unsweetened cocoa powder

  • 1 ½ tsp baking powder

  • 1 ½ tsp baking soda

  • 1 tsp salt

  • 2 eggs

  • 1 cup buttermilk

  • ½ cup vegetable oil

  • 2 tsp vanilla extract

  • 1 cup boiling water

Directions:

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.

  2. In a large mixing bowl, sift together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.

  3. Add the eggs, buttermilk, vegetable oil, and vanilla extract to the dry ingredients. Mix until well combined.

  4. Stir in the boiling water. The batter will be thin; don't worry, that's what makes it moist!

  5. Pour the batter evenly into the prepared pans.

  6. Bake in the preheated oven for 30-35 minutes or until a toothpick inserted into the center comes out clean.

  7. Allow the cakes to cool in the pans for 10 minutes before transferring them to a wire rack to cool completely.

Chocolate Icing

Ingredients:

  • 1 cup (2 sticks) unsalted butter, softened

  • 1 ½ cups unsweetened cocoa powder

  • 5 cups confectioners' sugar

  • ½ cup milk

  • 2 tsp vanilla extract

  • A pinch of salt

Directions:

  1. In a large mixing bowl, sift together the cocoa powder and confectioners' sugar to remove any lumps.

  2. In another bowl, beat the softened butter until creamy.

  3. Gradually add the cocoa mixture, milk, vanilla extract, and a pinch of salt. Beat until smooth and creamy.

  4. Once the cakes are completely cooled, spread a layer of chocolate icing between them and on the top and sides of the cake. Decorate as desired.

Now that we've satisfied our sweet tooth, let's talk real estate!
