In West Texas, BBQ beans aren’t just a side dish—they’re a tradition. Slow-simmered, savory, spicy, and kissed with just the right amount of sweet, these beans bring the heat to any backyard cookout. Whether you're feeding a hungry crowd or planning your dream home by the grill, this dish fits right into the rhythm of our West Texas lifestyle.

🍽️ West Texas BBQ Beans with Homemade Sauce

Ingredients (Serves 8-10):

For the Beans:

  • 1 lb dried pinto beans

  • 1/2 lb thick-cut bacon, chopped

  • 1/2 medium onion, finely diced

  • 1 jalapeño, deseeded and minced

  • 2 cloves garlic, minced

  • Water for soaking and simmering

  • Salt to taste

For the West Texas BBQ Sauce:

  • 1/2 cup ketchup

  • 1/4 cup tomato paste

  • 1/4 cup apple cider vinegar

  • 1/4 cup dark brown sugar

  • 2 tbsp Worcestershire sauce

  • 1 tbsp yellow mustard

  • 1 tbsp chili powder

  • 1 tsp cumin

  • 1/2 tsp smoked paprika

  • Salt & pepper to taste

Instructions:

  1. Soak the Beans: Rinse and sort dried beans. Soak overnight in cold water, or use a quick soak method by boiling for 2 minutes, removing from heat, and letting sit covered for 1 hour. Drain and rinse.

  2. Simmer the Beans: In a large pot, cover soaked beans with fresh water and bring to a boil. Reduce heat and simmer for 1 to 1.5 hours, or until tender. Add salt during the final 15 minutes of cooking. Drain and set aside.

  3. Sizzle the Bacon: In a Dutch oven or heavy-bottomed pot, cook the chopped bacon over medium heat until crispy. Remove and set aside, leaving the grease.

  4. Sauté & Build Flavor: In the bacon drippings, sauté onion, jalapeño, and garlic until softened and aromatic.

  5. Simmer the Sauce: Stir in ketchup, tomato paste, vinegar, brown sugar, Worcestershire, mustard, and spices. Cook for 10 minutes, stirring occasionally.

  6. Mix the Beans: Add cooked beans to the sauce, fold in the crispy bacon, and stir until well combined. Simmer on low for 30-45 minutes to allow flavors to meld.

  7. Serve & Share: Serve warm, topped with green onions or a sprinkle of cheddar cheese if desired. These beans are perfect alongside smoked ribs, pulled pork, or just a slice of Texas toast.
