Hello, dear friends and neighbors! It’s Lainie Eilenberger here, your go-to real estate agent for Lubbock and the vast expanses of West Texas. Today, I'm excited to share a little piece of my kitchen with you—a recipe that's as delightful and welcoming as the homes I help you find and sell: homemade pot stickers served with a sweet red chili sauce. Just as I blend the art of finding the perfect home with understanding each client’s unique desires, this recipe merges simple ingredients with rich flavors to create something truly special.

Pot Stickers with Sweet Red Chili Sauce Recipe

Before we dive into the heart of our homes, let’s start with what makes a home feel warm and inviting—delicious food shared with loved ones. Here’s how to bring a taste of my kitchen to yours:

Ingredients for Pot Stickers:

  • 1 lb ground pork or chicken

  • 2 cups finely chopped cabbage

  • 1/4 cup green onions, thinly sliced

  • 2 cloves garlic, minced

  • 1 tbsp ginger, grated

  • 2 tbsp soy sauce

  • 1 tsp sesame oil

  • Salt and pepper, to taste

  • Pot sticker wrappers

  • 2 tbsp vegetable oil for frying

  • 1/2 cup water

Ingredients for Sweet Red Chili Sauce:

  • 1 cup water

  • 1/2 cup rice vinegar

  • 1/2 cup sugar

  • 2 tbsp chili paste

  • 2 cloves garlic, minced

  • 1 tbsp cornstarch dissolved in 2 tablespoons of water

Directions:

  1. Mix Filling: In a large bowl, combine the pork or chicken, cabbage, green onions, garlic, ginger, soy sauce, and sesame oil. Season with salt and pepper.

  2. Fill and Fold: Place a spoonful of the filling in the center of each pot sticker wrapper. Wet the edges with water, fold over, and press to seal.

  3. Cook: Heat oil in a pan over medium heat. Add pot stickers in a single layer and cook until the bottom is golden brown. Add water, cover, and steam until the water has evaporated and the pot stickers are cooked through.

  4. Make Sauce: Combine water, rice vinegar, sugar, chili paste, and garlic in a saucepan. Bring to a boil, add the cornstarch mixture, and simmer until thickened.
