  • 1/3 cup melted butter

  • For the Filling:

  • 1/2 cup fresh lime juice

  • Zest of 2 limes

  • 1 cup powdered erythritol

  • 3 large eggs

  • 1/4 cup heavy cream

Directions:

  1. Preheat your oven to 350°F (175°C) and line an 8x8-inch baking pan with parchment paper.

  2. To make the crust, mix the almond flour, powdered erythritol, and melted butter in a bowl. Press this mixture into the bottom of the prepared pan.

Just as I've tailored my real estate services to meet your unique needs, this hearty chili recipe offers a personalized kick, with the option to adjust the heat level to your liking. So, let's explore Lubbock's vibrant housing market while simmering up a pot of comfort and warmth!

Ingredients:

  • 2 pounds ground beef

  • 1 large onion, chopped

  • 3 cloves garlic, minced

  • 2 habanero peppers, finely chopped (adjust to your preferred spice level)

  • 2 cans (14 ounces each) diced tomatoes

  • 1 can (15 ounces) kidney beans, drained and rinsed

  • 1 can (15 ounces) black beans, drained and rinsed

  • 1 can (15 ounces) pinto beans, drained and rinsed

  • 2 cups beef broth

  • 2 tablespoons chili powder

  • 1 tablespoon cumin

  • 1 teaspoon paprika

  • 1 teaspoon oregano

  • Salt and pepper to taste

  • Shredded cheddar cheese, sour cream, and chopped green onions for topping (optional)

Instructions:

  1. In a large pot or Dutch oven, brown the ground beef over medium-high heat. Break it into crumbles as it cooks. Drain any excess fat and set aside.

  2. In the same pot, add chopped onions and garlic. Sauté for a few minutes until they become translucent.

  3. Stir in the chopped habanero peppers. Be cautious when handling habaneros; you may want to use gloves, and be sure not to touch your face.

  4. Return the cooked beef to the pot and mix well with the onions, garlic, and habaneros.

  5. Add the diced tomatoes (with their juice) and all three types of beans to the pot. Stir to combine.

  6. Pour in the beef broth and add the chili powder, cumin, paprika, and oregano. Season with salt and pepper to taste. Stir everything together.

  7. Bring the chili to a boil, then reduce the heat to low. Cover and let it simmer for at least 30 minutes, stirring occasionally. The longer it simmers, the more the flavors will meld together.

  8. Taste and adjust the seasoning, adding more spices or salt as needed to suit your taste.

  9. Serve your hearty chili hot, garnished with shredded cheddar cheese, a dollop of sour cream, and chopped green onions if desired.

Enjoy your spicy and flavorful chili with a side of Lainie's famous jalapeno cornbread!

As the holiday season blankets our homes in warmth and joy, there's no better way to embrace the festivities than by savoring a steaming cup of homemade hot cocoa. Hi there, I'm Lainie Eilenberger, your dedicated Lubbock and West Texas Real Estate Agent, and today, I'm thrilled to share this delightful and heartwarming recipe with you, perfect for creating cherished memories around the fireplace and beneath the twinkling Christmas lights. 🏡🎁

Ingredients:

  • 4 cups of milk

  • 1/2 cup of unsweetened cocoa powder

  • 1/2 cup of granulated sugar

  • 1/2 cup of hot water

  • 1/4 teaspoon of salt

  • 1 teaspoon of pure vanilla extract

  • Large, fluffy marshmallows (for that extra dose of holiday magic)

  • Optional - Festive holiday sprinkles (for that Christmassy touch)

Directions:

  1. In a cozy saucepan that seems to have been crafted for holiday moments, whisk together the cocoa powder, sugar, and a pinch of salt, infusing the mixture with love and anticipation.

  2. Add hot water and let the cocoa magic simmer. Stir this brew of dreams constantly, feeling the warmth and cocoa essence infuse the air.

  3. Continue the gentle simmer for about 2 minutes, letting your senses revel in the delightful aroma. Keep a watchful eye, so your cocoa adventure doesn't get too adventurous!

  4. As the cocoa brews, listen to the gentle hum of your holiday playlist in the background. This is when the magic starts to unfold.

  5. Now, it's time to introduce the milk. Pour it in gently, as if you're adding a layer of snow to a picturesque winter scene.

  6. Heat this heavenly mixture until it's hot enough to bring rosy cheeks to even the chilliest of elves. But remember, don't let it boil—keep it just shy of reaching that point.

  7. As you remove it from the stove, add a splash of pure vanilla extract. Ah, the aroma is intoxicating!

  8. Gently pour this liquid delight into your favorite holiday mugs. Leave a little room at the top for the grand finale.

  9. Crown each cup with a cloud-like marshmallow or two, just waiting to be toasted by your heart's warmth.

  10. And now, for the pièce de résistance, sprinkle on those festive holiday sprinkles. It's like adorning your cocoa masterpiece with twinkling stars from the Christmas sky.

As you cozy up by the crackling fire, gazing at your beautifully decorated tree, and your loved ones, you're ready to sip on this creamy, dreamy hot cocoa. It's the taste of pure holiday enchantment, a sip of the season's magic that warms not only your hands but also your heart. 🔥✨
